i get to see my family.
this weekend my grandma [on my mom's side] turns 90! thats really old when you think about it. she has lived an incredible life. i am putting together this slide show thing of pictures and music relating to my grandma's life. it was so cool to see pics of her when she was in her prime. what a looker she was! i will maybe do a post-weekend post and include some pics. i have a few select ones that i want to print out and frame.
anyways, so my sister, niece and i are traveling up north tomorrow and will be staying in a hotel. eeks! bring the bathing suit! so stoked for a hot tub. my mom said my little niece is saying all kinds of things now. ugh i cant wait to see her and spend some quality auntie time with her! so we basically get to have a girls day tomorrow which is going to be so fun to hang out - just us three.
last night, my roomie and i made these incredible stuffed peppers. i mean, they were gorgeous when i pulled them from the oven. i wish i had taken a photo. she introduced me to stuffed peppers- my roomie. what a genius she is. she makes hers with keen-wa [spell check?] - which is also pretty good. but i made mine with rice. boring ol' rice. but it was fantastic. Here is the recipe we used. we threw in some other random things like salsa and whatnot but try it. i like mine with a kick, so i added ground peppers and some hot sauce. oh and steam the peppers before hand. at least that is what the roomie recommended and i agree with her - steamed peppers are perfection.
they are also good for left overs. i was worried the pepper would get soggy but it didnt. heated it up in the microwave for 2 mins then cooked it in the toaster oven [all we have a work...] for a few minutes and it was like it was fresh. yum!
a side note too regarding the recipe above - the serving size is a bit wacky. we did 4 servings [4 peppers] and had quite a bit of the stuffing left over. just for the forewarning.
anywho, its lunch break on friday and my stuffed pepper is getting cold.
la ta di da... family is the spice of life.
